Because they are so versatile and INEXPENSIVE. You can get an incredible amount of fabric for just a few dollars. They come hemmed which make them washable. They can be bleached or dyed and they come in a multitude of sizes.

I cover my couch with drop cloths, and then use a different pretty seasonal sheet set for the cushions and pillows--love that it's all machine washable and looks great with our walls and floors in the room.
